Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper or foil; grease if using foil to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the almond flour, grated parmesan cheese, Italian seasoning, sea salt, and black pepper, stirring well.
  3. Add Wet Ingredients: Whisk in the low carb milk, grated onion, egg, minced garlic, and chopped fresh parsley into the dry mixture. Allow it to rest for a couple of minutes so flavors meld.
  4. Incorporate Ground Beef: Gently mix in the ground beef using your hands until just combined to avoid tough meatballs.
  5. Form Meatballs: Shape the mixture into 1-inch (2.5 cm) balls using a small cookie scoop or your hands, taking care not to pack them tightly. Place them on the prepared baking sheet.
  6. Bake Meatballs: Bake in the oven for 10-12 minutes until the meatballs are just cooked through, reaching an internal temperature of 155-160°F. For a golden finish, broil for 1-3 minutes if desired. Drain any excess liquid.
