For the Pepper Steak:

  • 1 tablespoon sesame oil (or avocado oil)
  • 1 pound sirloin steak (cut into thin strips)
  • 1 clove garlic, minced
  • Salt and pepper, to taste

For the Stir-Fry:

  • 1 medium green bell pepper, cut into strips
  • 1/4 cup onion, chopped
  • 1/2 cup beef broth
  • 2 tablespoons soy sauce (or tamari)
  • 8 ounces mushrooms, sliced
  • 1/4 teaspoon xanthan gum (add more if needed, optional thickener)
  • 15 ounces baby corn (optional)

Instructions

  1. Heat Oil: Heat oil in a large skillet or wok over medium-high heat.
  2. Cook Steak: Add the beef strips and garlic; cook until the beef is browned. Season with salt and pepper to taste, then remove from skillet.
  3. Cook Veggies: Add additional oil to the skillet if needed. Cook pepper and onion until tender.
  4. Add Broth and Soy Sauce: Stir in the broth, soy sauce, mushrooms, xanthan gum, and baby corn (if using).
  5. Cook Mushrooms: Cook and stir until mushrooms are softened.
  6. Add In Beef and Stir: Add the beef back to the skillet and continue cooking until heated throughout.
