For the Chicken:

  • 5 Thin-cut boneless skinless chicken breast cutlets
  • 2 tbsp Olive Oil
  • 1 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Oregano
  • Salt and Pepper to taste

For the Skillet:

  • 2 tbsp Butter
  • 2 tsp Minced Garlic
  • 1/2 Onion (chopped)
  • 2 Jalapenos (deseeded and finely chopped)
  • 1 tbsp Taco Seasoning
  • 1 bag Frozen Cauliflower Rice
  • 1 1/2 cups Shredded Mexican blend Cheese (divided)

Instructions

  1. Prepare the cauliflower rice: Cook according to package instructions and set aside.
  2. Season and cook the chicken: In a skillet over medium-high heat, sear the seasoned chicken until cooked through. Remove and set aside.
  3. Cook the vegetables: Reduce heat to medium, add butter to the skillet, then cook onion and jalapeno until softened. Add garlic and sauté briefly.
  4. Combine skillet ingredients: Stir in cauliflower rice and taco seasoning. Add 1 cup of cheese, stirring until melted.
  5. Assemble the skillet: Return chicken to the skillet, sprinkle with remaining cheese, and cover until cheese melts.
  6. Serve: Garnish with parsley or cilantro if desired.
