For the Rolls:

  • 2 cups shredded mozzarella or cheddar
  • ¼ cup softened cream cheese
  • 1½ cups super-fine almond flour
  • 2 large eggs (1 for dough, 1 for egg wash)
  • 1 tsp baking powder

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Melt Cheese: In a microwave-safe bowl, combine shredded cheese and cream cheese. Microwave in 30-second bursts until melted and smooth.
  3. Mix Dough: Allow the cheese mixture to cool slightly, then mix in almond flour, baking powder, and 1 egg. Knead until a dough forms.
  4. Shape Rolls: Divide the dough into 6-8 balls, place them on the prepared baking sheet, and gently flatten them.
  5. Egg Wash: Beat the remaining egg with 1 tsp of water, then brush it over the tops of the rolls.
  6. Bake: Bake the rolls for 18-22 minutes until they are golden and sound hollow when tapped. Allow them to cool for 10 minutes before serving.
