- 3 3-ounce boxes flavored jello (different flavors/colors)
- 2½ cups granulated sugar
- ½ cup light corn syrup
- ½ cup water
- ½ cup finely chopped pecans (or any preferred nuts)
- Prepare Sugar Syrup: Using a 3 – 4 quart heavy-bottomed saucepan, combine granulated sugar, light corn syrup, and water over medium heat. Stir continuously until the sugar completely dissolves, making sure the mixture is even.
- Cook to Hard Ball Stage: Attach a candy thermometer to the saucepan’s side. Stop stirring once the syrup begins to boil. Allow it to cook undisturbed until it reaches the hard ball stage at 260°F (127°C).
- Prepare Tools: Spray or butter two teaspoons to prevent sticking and line two baking sheets with parchment or wax paper. Set aside for forming the divinity later.
- Whip Egg Whites: Just before the syrup nears 260°F, start whipping the egg whites in a stand mixer fitted with a whip attachment on high speed until they become foamy.
- Add Jello Powder: Reduce mixer speed to medium-low and gradually add the first flavored jello powder to the egg whites. Increase mixer speed back to high and continue whipping.
- Drizzle Syrup into Egg Whites: Once syrup reaches hard ball stage, remove from heat and candy thermometer. With the mixer on high speed, slowly drizzle the hot syrup into the jello-egg white mixture. Continue beating for 4-5 minutes until the mixture loses its shine and thickens.
- Fold in Nuts: Gently fold in the finely chopped pecans or nuts of choice to incorporate them evenly.
- Form Divinity: Using the two prepared spoons, scoop 1 to 1½ tablespoons of the divinity mixture and transfer it onto the lined baking sheets, using one spoon to help slide the candy off the other spoon.
- Repeat for Remaining Flavors: Repeat steps 4 through 8 for the remaining two jello flavors, preparing each flavor’s mixture separately to maintain distinct colors and flavors.
- Let Candy Set: Allow the formed divinity candies to rest at room temperature for 2 to 4 hours until they feel dry to the touch and set properly.
