Instructions

  1. Prepare Sugar Syrup: Using a 3 – 4 quart heavy-bottomed saucepan, combine granulated sugar, light corn syrup, and water over medium heat. Stir continuously until the sugar completely dissolves, making sure the mixture is even.
  2. Cook to Hard Ball Stage: Attach a candy thermometer to the saucepan’s side. Stop stirring once the syrup begins to boil. Allow it to cook undisturbed until it reaches the hard ball stage at 260°F (127°C).
  3. Prepare Tools: Spray or butter two teaspoons to prevent sticking and line two baking sheets with parchment or wax paper. Set aside for forming the divinity later.
  4. Whip Egg Whites: Just before the syrup nears 260°F, start whipping the egg whites in a stand mixer fitted with a whip attachment on high speed until they become foamy.
  5. Add Jello Powder: Reduce mixer speed to medium-low and gradually add the first flavored jello powder to the egg whites. Increase mixer speed back to high and continue whipping.
  6. Drizzle Syrup into Egg Whites: Once syrup reaches hard ball stage, remove from heat and candy thermometer. With the mixer on high speed, slowly drizzle the hot syrup into the jello-egg white mixture. Continue beating for 4-5 minutes until the mixture loses its shine and thickens.
  7. Fold in Nuts: Gently fold in the finely chopped pecans or nuts of choice to incorporate them evenly.
  8. Form Divinity: Using the two prepared spoons, scoop 1 to 1½ tablespoons of the divinity mixture and transfer it onto the lined baking sheets, using one spoon to help slide the candy off the other spoon.
  9. Repeat for Remaining Flavors: Repeat steps 4 through 8 for the remaining two jello flavors, preparing each flavor’s mixture separately to maintain distinct colors and flavors.
  10. Let Candy Set: Allow the formed divinity candies to rest at room temperature for 2 to 4 hours until they feel dry to the touch and set properly.
