  • 108 inch flour tortillas
  • 2 cups shredded colby jack cheese
  • 14 inch pumpkin-shaped cookie cutter

Instructions

  1. Cut Pumpkin Shapes: Use the 4 inch pumpkin cookie cutter to cut 2 pumpkin shapes from each tortilla. If you don’t have a cutter, carefully cut pumpkin shapes by hand using a knife or kitchen scissors. Set the pumpkin-shaped tortillas aside.
  2. Carve Faces: Using a sharp knife and a cutting board, carve spooky pumpkin faces into half of the pumpkin-shaped tortillas to create a jack o’ lantern effect.
  3. Assemble Quesadilla Base: Place one of the uncut pumpkin-shaped tortillas into a large skillet over medium heat. This will act as the base.
  4. Add Cheese: Sprinkle a generous layer of shredded colby jack cheese evenly over the uncut pumpkin tortilla in the skillet.
  5. Top with Face: Place a carved pumpkin face tortilla on top of the cheese, face down, so the cheese starts melting between the two tortilla layers.
  6. Flip Carefully: When the cheese begins to melt and the bottom tortilla is lightly browned, carefully flip the top carved pumpkin face tortilla onto the melted cheese side, ensuring the pumpkin stems face opposite directions for visual effect.
  7. Cook and Repeat: Cook until the cheese is fully melted and both sides are golden brown. Repeat the process for the remaining tortillas and cheese.
  8. Serve: Serve these festive quesadillas immediately with your favorite dipping sauces like salsa, guacamole, or sour cream for a perfect Halloween treat.
