Indian Style Pasta is a flavorful fusion dish that combines the comforting texture of pasta with aromatic Indian spices and fresh vegetables. This recipe features a medley of sautéed carrots, beans, and cauliflower cooked in a spiced tomato-based sauce, infused with mustard seeds, curry leaves, and garam masala. Pasta and Cooking Basics

  • 2 cups Dry Pasta (I used trottole pasta)
  • 6 cups Water
  • 2 tsp Salt (for boiling pasta)
  • 1 tbsp Oil

Tempering and Vegetables

  • 1 tsp Mustard Seeds
  • 1 sprig Curry leaves
  • 1 Medium Onion, peeled and sliced
  • 4 cloves Garlic, peeled and chopped
  • 1 medium Carrot, finely chopped
  • 6 Beans, finely chopped
  • ½ cup Cauliflower, finely chopped

Spice Mix and Sauce

  • 1 large Tomato, pureed
  • 1 tsp Chilli Powder
  • 1 tbsp Coriander Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Cumin Powder
  • 1 tsp Garam Masala Powder
  • 2 tsp Salt (or to taste)
  • 1 tsp Sugar
  • 3 tbsp Coriander Leaves, finely chopped
  • 1 cup Water

Instructions

  1. Cook Pasta: Boil pasta in plenty of salted water according to the package instructions until al dente. Drain the pasta thoroughly and set aside to prevent sticking.
  2. Prepare Tempering: Heat oil in a kadai or deep skillet over medium heat. Add mustard seeds, garlic, and curry leaves. Allow them to sizzle and release aroma for about one minute.
  3. Sauté Onions and Vegetables: Add the sliced onions to the pan and sauté for one minute until slightly softened. Then add the chopped carrots, beans, and cauliflower, stirring continuously for another minute to combine flavors.
  4. Add Spices and Tomato Puree: Mix in chili powder, coriander powder, turmeric, cumin powder, and garam masala. Stir everything well to coat the vegetables with the spices evenly. Pour in the pureed tomato along with 2 teaspoons of salt and 1 teaspoon of sugar, mixing thoroughly.
  5. Simmer the Sauce: Add one cup of water to the pan and cook the mixture until the vegetables are tender and the sauce thickens. Then add an additional ¼ cup of water and bring the mixture to a boil.
  6. Toss Pasta with Masala: Add the cooked pasta to the spiced vegetable sauce. Toss everything well to ensure the pasta is coated completely with the masala. Allow it to simmer gently for 5 minutes so the pasta absorbs the flavors and the sauce clings well.
  7. Garnish and Serve: Stir in the chopped coriander leaves. Mix well and serve hot, enjoying this unique and vibrant Indian-style pasta dish.

Notes

  • Use any pasta shape available, but shorter shapes like trottole or penne hold the masala better.
  • Adjust chili powder to your preferred spice level for a milder or spicier dish.
  • Fresh vegetables can be substituted or added based on availability, such as bell peppers or peas.
  • For a richer flavor, add a dash of lemon juice or a sprinkle of grated cheese while serving.
