  • ¾ cup soy sauce

  • 45 pounds boneless skinless chicken thighs

Instructions

  1. Prepare the Marinade: Whisk together brown sugar, ketchup, soy sauce, pineapple juice, apple cider vinegar, minced ginger, and garlic in a bowl until well combined. Optionally, set aside about ⅓ cup of the marinade in an airtight container and refrigerate for basting later.
  2. Trim Chicken: If desired, trim excess fat from the chicken thighs using kitchen shears. Leaving some fat on adds flavor and moisture during cooking.
  3. Marinate the Chicken: Place the chicken thighs in a large Ziploc bag or container. Pour the marinade over the chicken, seal the bag, and refrigerate for 6-8 hours to allow the flavors to penetrate the meat deeply.
  4. Preheat the Grill: When ready to cook, preheat the grill to medium-high heat. Reduce the heat slightly and lightly oil the grill grate to prevent sticking.
  5. Grill the Chicken: Place the marinated chicken thighs onto the grill and close the lid. Cook for approximately 5 minutes per side or until an instant-read thermometer inserted into the thickest part reads 165℉ (74℃).
  6. Baste with Reserved Marinade: Reduce the grill heat to low and baste each side of the chicken with the reserved marinade glaze. Cook for an additional 1 minute per side to create a sticky, flavorful coating.
  7. Rest and Serve: Remove the chicken from the grill and cover loosely with foil. Let it rest for about 5 minutes to redistribute juices, then serve hot.
