Ingredients

Scale

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper, to taste

For the Avocado Rice:

  • 1 cup white or brown rice
  • 2 cups water or chicken broth
  • 1 tbsp olive oil
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 tsp lime zest
  • Salt and pepper, to taste

For Assembly:

  • 1/2 cup sour cream (optional for topping)
  • Lime wedges (optional for garnish)

Instructions

  1. Marinate the Chicken: In a small bowl, whisk together honey, lime juice, olive oil, minced garlic, chili powder, cumin, salt, and pepper. Place the chicken breasts in a resealable bag or shallow dish, pour the marinade over them, seal, and refrigerate for at least 30 minutes or up to 4 hours to allow the flavors to infuse.
  2. Cook the Chicken: Preheat a grill, grill pan, or skillet over medium-high heat. Remove the chicken breasts from the marinade and cook on each side for 6-7 minutes, or until the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken and let it rest for 5 minutes before slicing into strips.
  3. Make the Avocado Rice: While the chicken is cooking, prepare the rice according to package instructions using water or chicken broth for extra flavor. When cooked, fluff the rice with a fork, then stir in olive oil, diced avocado, chopped fresh cilantro, lime zest, and season with salt and pepper to taste.
  4. Assemble the Stack: In serving dishes, place a layer of the avocado rice as the base. Top with sliced honey lime chicken strips. Drizzle with sour cream if desired, and garnish with lime wedges for an added burst of citrus.

Notes

  • Marinate chicken for longer (up to 4 hours) to enhance flavor and tenderness.
  • Use chicken broth instead of water to cook rice for more depth of flavor.
  • Adjust spice level by adding more or less chili powder according to taste.
  • Serve with a side salad or steamed vegetables to make it a complete meal.
  • Sour cream topping is optional and can be replaced with Greek yogurt for a healthier alternative.
