  • 1 tbsp Olive oil
  • 1 small Onion (sliced thinly)
  • 3 cloves Garlic (minced)
  • 1 tbsp White vinegar

Instructions

  1. Prepare the spice mix: In a small jar or bowl, combine paprika, chili powder, cumin, oregano, coriander, salt, and cinnamon. Stir thoroughly to blend all spices evenly.
  2. Mix the meat and spices: In a large bowl, combine the ground pork with the prepared spice mix. Mix gently until just combined, making sure not to overwork the meat to retain a tender texture.
  3. Sauté aromatics: Heat olive oil in a large skillet over medium heat until shimmering. Add the minced garlic and sliced onions, cooking for about 5 minutes until the garlic becomes fragrant and the onions turn translucent.
  4. Cook the chorizo: Add the spiced pork mixture to the skillet and increase the heat to medium-high. Cook for 7 to 10 minutes, breaking the meat apart with a spatula, until it is fully cooked through and no longer pink.
  5. Finish with vinegar and seasoning: Stir in the white vinegar to enhance the flavors. Taste and adjust the salt if necessary, then remove from heat and serve as desired.
