  • 8 large soft medjool dates
  • 1/2 cup creamy peanut butter (all-natural)
  • 2 Tablespoons pure maple syrup (optional)
  • 1/4 cup crushed pretzels (gluten-free + paleo if needed)

Assembly:

  • 20 whole pretzels (gluten-free + paleo if needed)
  • 1 cup dark chocolate chips (vegan + paleo if needed)
  • 1 1/2 Tablespoons coconut oil

Instructions

  1. Prepare Dates Filling: If dates are not soft, soak in water for 10 minutes. Drain water before adding to food processor. Combine dates, peanut butter, and maple syrup until a gooey filling forms. Fold in crushed pretzels.
  2. Assemble Bars: Place whole pretzels on a tray and top each with filling, shaping into bars. Freeze for 10-15 minutes.
  3. Melt Chocolate: Combine chocolate chips and coconut oil, melt using the double boiler method or microwave.
  4. Coat Bars: Dip each bar in melted chocolate, place on parchment paper. Drizzle with more chocolate if desired.
  5. Chill: Freeze bars for an hour until chocolate hardens. Enjoy!
