Zucchini:

  • 2 medium zucchini, sliced (about 2 pounds)

Ground Beef Mixture:

  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 2 garlic cloves (minced)
  • 1 pound lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 28 ounce can diced tomatoes (drained)
  • 2 cups shredded mozzarella cheese

Instructions

  1. Prepare Zucchini: Slice zucchini into 1/2″ rounds. Salt zucchini rounds in a sieve for 15 minutes, rinse, and pat dry.
  2. Sauté Onions and Beef: In a skillet, heat oil and cook onions until soft. Add garlic and ground beef, cook until browned.
  3. Add Seasonings: Stir in tomatoes, Italian seasoning, salt, and pepper. Remove from heat.
  4. Assemble Casserole: Preheat oven to 350°F. Layer half of the beef mixture, zucchini slices, and mozzarella in a baking dish. Repeat with remaining ingredients.
  5. Bake: Bake for 20-25 minutes until cheese is melted and bubbly.
  6. Rest and Serve: Allow casserole to rest for 10 minutes before serving.
