Mushroom Skewers:

  • 16 oz Baby Portabello Mushrooms (crimini or button work too)
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • small handful of parsley
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp cayenne pepper
  • 12 garlic cloves
  • 1 Tbsp balsamic vinegar
  • 10 10-inch bamboo/wood skewers

Instructions

  1. Soak Skewers: Place 10 medium skewers into a baking dish and cover with water. Soak for at least 15 minutes.
  2. Prepare Marinade: Blend olive oil, lemon juice, parsley, sugar, salt, pepper, cayenne pepper, garlic, and balsamic vinegar in a food processor until smooth.
  3. Marinate Mushrooms: Cut mushrooms in half, place in a bag or bowl, pour marinade over mushrooms, shake to coat evenly. Refrigerate for 30-45 minutes.
  4. Preheat Grill: Preheat grill to about 300˚F.
  5. Skewer Mushrooms: Skewer marinated mushrooms onto soaked skewers, twisting to secure them.
  6. Grill Mushrooms: Grill skewered mushrooms for about 3 minutes per side until soft. Remove from grill and cover with foil until serving.

  • Make sure to soak the skewers to prevent burning on the grill.
