Delicious grilled chicken with a flavorful peach chipotle sauce that adds a sweet and spicy kick to your meal.

For the Peach Chipotle Sauce:

  • 4 peaches, peeled and sliced into quarters
  • 2 stalks green onion, thinly sliced
  • 1 canned chipotle pepper in adobo, plus 2 tsp sauce from the can
  • 1/2 cup freshly chopped cilantro
  • 1 1/2 tsp salt, divided
  • 1 1/2 tsp ground black pepper, divided
  • 1/2 tsp cayenne pepper

For the Chicken:

  • 4 boneless, skinless chicken breasts

Instructions

  1. Preheat grill to high heat.
  2. 2. Arrange peach quarters on the grill, and cook for approximately 3-4 minutes on each side. Remove from grill and set aside to cool.

  3. Chop the peaches and chipotle pepper.
  4. 4. Place in a medium bowl with the scallion and adobo sauce. Toss to coat. Gently fold in cilantro, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Refrigerate until ready to serve.

  5. In a small bowl, stir together with the cayenne, and remaining salt and black pepper.
  6. 6. Season chicken breasts on both sides with the spice mixture.

  7. Place on the grill and cook for approximately 5-7 minutes per side, until the internal temperature reaches 165°F.
  8. 8. Serve immediately, topped with peach chipotle sauce.
