For the Chicken Marinade

  • 2 chicken thighs (skinless and boneless), sliced into chunks

  • 1/2 lemon, juiced
  • 1 tbsp olive oil

For the Potato Wedges

  • 2 large potatoes, sliced into 1cm thick wedges
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

For the Tzatziki Sauce

  • 2 tbsp Greek yoghurt
  • 1/2 cucumber, grated and squeezed to remove any water
  • 2 tsp garlic, minced
  • 1/2 lemon, juiced
  • 1 tsp salt
  • 1 tsp black pepper

For Assembly

  • 1 large flatbread (or two medium-sized flatbreads), preferably garlic and herb flavor
  • 1 tomato, cut into 6 wedges
  • 1/2 red onion, sliced
  • Small bunch of parsley, roughly chopped

Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken chunks with minced garlic, mixed herbs, salt, black pepper, lemon juice, and olive oil. Mix well to coat all pieces. Set aside to marinate for 20 minutes to allow the flavors to infuse.
  2. Prepare the Potato Wedges: Slice the potatoes into 1cm thick wedges. Toss them in olive oil, salt, and black pepper until evenly coated, ensuring crispiness during cooking.
  3. Load the Air Fryer: Place the seasoned potato wedges into one compartment of your Ninja Foodi Air Fryer. Thread the marinated chicken pieces onto two skewers and place them into the other air fryer compartment.
  4. Cook Chicken and Potatoes: Set the Ninja Foodi Air Fryer to 200°C (390°F) and cook everything simultaneously for 16 minutes. Use the MATCH function to synchronize cooking times and ensure both chicken and potatoes finish perfectly together. Turn the chicken and potatoes halfway through cooking for even browning and crispiness.
  5. Remove and Rest: Once cooked, carefully slice the chicken off the skewers into small chunks. Keep warm while preparing the remaining components.
  6. Make the Tzatziki Sauce: In a bowl, combine Greek yoghurt, grated and well-drained cucumber, minced garlic, lemon juice, salt, and black pepper. Stir thoroughly and adjust seasoning to taste.
  7. Prep Fresh Vegetables: Slice the red onion, cut the tomato into wedges, and roughly chop the parsley to add fresh and vibrant flavors to your gyro.
  8. Toast the Flatbread: Warm or lightly toast the flatbread to enhance its softness and bring out the garlic and herb aroma, making it pliable for rolling.
  9. Assemble the Gyros: Spread a layer of tzatziki over the flatbread, then add the cooked chicken chunks, crispy potato wedges, tomato wedges, sliced red onion, and chopped parsley. Add another dollop of tzatziki on top for extra creaminess.
