  • ½ Cup Mini Chocolate Chips (Dairy Free Optional)
  • 1 Tbsp Chia Seeds
  • 1 Tbsp Flax Seeds
  • 1/4 Cup Chopped Nuts

Instructions

  1. Preheat Oven: Preheat oven to 350 degrees F and prepare a baking sheet with parchment paper.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, melted coconut oil, melted almond butter, honey, and vanilla extract until smooth and creamy.
  3. Combine Dry Ingredients: Add the gluten-free oats, cinnamon, baking soda, baking powder, and salt to the almond butter mixture and mix until well combined.
  4. Add Mix-Ins: Fold in the dried cranberries, mini chocolate chips, and any additional add-ins to the breakfast cookie batter.
