Funfetti Cake
- 3/4 cup (168g) unsalted butter, room temperature
- 1 1/2 cups (300g) granulated sugar
- 1/3 cup (75g) vegetable oil
- 1 tablespoon clear vanilla extract
- 3 large eggs, room temperature
- 2 tablespoons cornstarch
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 1/4 cup (60g) water, room temperature
- 2 1/2 cups (320g) all-purpose flour or 1-to-1 gluten-free baking flour, spooned and leveled
- 1 cup (240g) buttermilk, room temperature
- 1/2 cup + 2 tbsp (115g) rainbow sprinkles (only use jimmies)
Vanilla Frosting
- 1/2 cup (112g) vegetable shortening
- 1/2 cup (112g) unsalted butter, room temperature
- 4 cups (440g) powdered sugar, spooned and leveled
- 2 tsp clear vanilla extract
- 3–4 tbsp water, room temperature
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish and line with parchment paper, ensuring the bottom and two longest sides have some overhang for easy cake removal.
- Cream Butter and Sugar: In a large bowl, using a hand or stand mixer fitted with a paddle attachment, beat the unsalted butter and granulated sugar on medium-high speed for about 1 minute until the mixture is light and fluffy.
- Add Oil: Scrape down the bowl, then mix in the vegetable oil on medium speed until the batter achieves a creamy consistency.
- Incorporate Vanilla and Eggs: Add the clear vanilla extract and eggs to the mixture, blending until smooth and fully combined.
- Add Dry Ingredients: Scrape down the bowl, then add cornstarch, baking powder, and kosher salt. Mix to fully incorporate all ingredients evenly.
- Mix Wet Ingredients: Scrape down the sides and mix in the water until smooth.
- Combine Flour and Buttermilk: Gradually add the all-purpose flour on low speed. About halfway through mixing in the flour, pour in the buttermilk and continue mixing until the batter is thick but smooth. Scrape down the bowl once more to ensure everything is well incorporated, then gently fold in the rainbow sprinkles.
- Bake the Cake: Spread the batter evenly in the prepared pan. Bake in the preheated oven for 32 to 38 minutes, or until the cake is evenly puffed and a toothpick inserted in the center comes out clean or with a few moist crumbs. Allow the cake to cool for 20 minutes in the pan, then transfer to a wire rack or refrigerate until completely cool.
- Make the Frosting: In a large bowl, beat the vegetable shortening and unsalted butter together using a mixer until smooth, even if the mixture looks slightly lumpy.
- Add Powdered Sugar and Vanilla: Mix in half of the powdered sugar, followed by the clear vanilla extract, then add the remaining powdered sugar. The frosting should be very thick at this stage.
- Thin the Frosting: Scrape down the bowl and gradually add 3 tablespoons of water, mixing until smooth. Add the remaining tablespoon of water only if needed to reach a spreadable consistency.
- Frost the Cake: Spread the vanilla frosting evenly over the cooled cake. Sprinkle additional rainbow jimmies on top for decoration.
