Banana Bites
- 2 large bananas, sliced into 1 inch rounds
Toppings
- Assorted toppings such as peanut butter, pretzels, honey (see notes for combos)
Chocolate Coating
- 12 ounces semi-sweet or dark chocolate, chopped
- 1 tablespoon coconut oil
- Flaky sea salt, for sprinkling
- Slice Bananas: Cut the bananas into 1-inch thick rounds and arrange them on a parchment-lined baking sheet to prepare for freezing.
- Add Toppings and Freeze: Lightly top each banana slice with your choice of toppings such as peanut butter or pretzels, ensuring not to overload them. Place the prepared slices back on the parchment-lined baking sheet and freeze for 20 minutes until firm.
- Melt Chocolate: While the bananas freeze, line a mini or regular cupcake mold with paper liners. In a microwave-safe bowl, melt the chopped chocolate with coconut oil using 30-second intervals, stirring between each interval until fully melted and smooth.
- Assemble Bites: Drop about 2 teaspoons of melted chocolate into each lined mold. Place a frozen banana slice on top, allowing it to slightly pop out of the mold if needed. Pour additional melted chocolate over the bananas to mostly cover them. Sprinkle with flaky sea salt for contrast.
- Freeze Again: Freeze the assembled banana bites for about 2 hours, until completely firm and frozen solid.
- Serve: Remove the bites from the freezer, allow to sit for 2-3 minutes to slightly soften, then enjoy as a deliciously refreshing treat.
Notes
- For toppings combos, try peanut butter with pretzel pieces for a sweet-salty crunch or honey drizzle for added natural sweetness.
- Do not overload banana slices with toppings to ensure easy coating with chocolate.
- Use quality semi-sweet or dark chocolate depending on your preference for sweetness level.
- Coconut oil helps the chocolate melt smoothly and gives a glossy finish.
