Ingredients

Scale

Pizza Dough and Base

  • 1 Pizza Dough, room temperature
  • 3 TBSP Corn Meal
  • Drizzle of Olive Oil
  • 1 TBSP Butter

Onion Mixture

  • 4 Medium Onions, thinly sliced
  • ½ tsp Salt
  • 3 sprigs Fresh Thyme
  • 2 cloves Garlic, minced
  • ½ tsp Black Pepper
  • ½ cup Red Wine
  • 1 cup Beef Stock

Cheese

  • 1 cup Shredded Mozzarella Cheese
  • 6 oz Gruyère Cheese, shredded

Instructions

  1. Prepare the Onions: In a large pot, melt the butter over medium heat and add the thinly sliced onions and salt. Cook slowly, stirring minimally, to caramelize the onions evenly, which will take about 20 minutes. The goal is to develop a deep brown color for the richest flavor.
  2. Add Aromatics: Once the onions are soft and fragrant, stir in the fresh thyme sprigs, minced garlic, and black pepper for added aroma and depth.
  3. Deglaze with Red Wine: Pour in the red wine and scrape the bottom of the pot with a wooden spoon to incorporate browned bits. Continue to cook over medium heat until the wine has fully reduced, about 3-5 minutes, concentrating the flavors.
  4. Add Beef Stock: Pour in the beef stock and bring to medium-high heat, then cook down until nearly all the liquid has evaporated and the mixture thickens, about 3-5 minutes. Remove from heat and set aside.
  5. Prepare the Pizza Base: Preheat oven to 425°F (220°C). Sprinkle corn meal evenly in a cast iron skillet to prevent sticking and to add texture. Place the pizza dough in the skillet and press it outwards to the edges, slightly up the sides to create a pan-style crust. Drizzle olive oil over the dough to help create a crispy, sturdy crust.
  6. Add Cheeses: Sprinkle the shredded mozzarella cheese evenly over the dough for a melty base layer.
  7. Top with Onions: Remove thyme sprigs from the onion mixture and set aside for garnish. Using a fork or tongs, layer the caramelized onion mixture over the mozzarella, letting any excess liquid drip off before adding.
  8. Add Gruyère Cheese: Scatter the shredded Gruyère cheese on top of the onions to create a rich, bubbly, golden finish when baked.
  9. Bake the Pizza: Place the skillet in the preheated oven and bake for 12 to 14 minutes until the crust is golden and cheese is melted and bubbly.
  10. Garnish and Serve: Remove pizza from oven, garnish with fresh thyme leaves, slice, and enjoy while hot for the best flavor and texture.

Notes

  • Make sure to cook the onions slowly and stir minimally to develop maximum caramelization and flavor.
  • Red wine can be omitted if preferred, but it adds depth to the flavor profile.
  • Use a cast iron skillet for the best pan-style crust texture, but a pizza stone or baking sheet can substitute.
  • Allow the dough to come to room temperature before stretching for easier handling.
  • Gruyère cheese can be substituted with Emmental or Swiss cheese if needed.
  • For a vegetarian version, swap beef stock with a rich vegetable stock.
