Batter:
- 1 cup Kefir
- 1/4 cup water
- 1 egg
- 2 cups all-purpose flour (plus 2–3 more tablespoons if needed)
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
Additions:
- 3 apples, peeled, cored, and diced
- 5–6 tablespoons neutral oil for cooking
- Make a batter for Oladi – In a small bowl, combine Kefir and water, then microwave for 30 seconds. In a large mixing bowl, combine egg, salt, and sugar. Add warmed Kefir and mix until combined.
- Add flour – Gradually add 2 cups of flour, mixing until smooth. Adjust consistency with additional flour if needed.
- Add baking soda – Mix in the baking soda, then add diced apples and stir gently.
- Fry the pancakes – Melt 2 tbsp oil in a non-stick skillet over medium heat. Drop batter by heaping tablespoons, cook until golden, then flip and cook the other side. Repeat for remaining batter.
- Serve – Enjoy Oladi warm with jam, honey, or sour cream.
