Batter:

  • 1 cup Kefir
  • 1/4 cup water
  • 1 egg
  • 2 cups all-purpose flour (plus 23 more tablespoons if needed)
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Additions:

  • 3 apples, peeled, cored, and diced
  • 56 tablespoons neutral oil for cooking

Instructions

  1. Make a batter for Oladi – In a small bowl, combine Kefir and water, then microwave for 30 seconds. In a large mixing bowl, combine egg, salt, and sugar. Add warmed Kefir and mix until combined.
  2. Add flour – Gradually add 2 cups of flour, mixing until smooth. Adjust consistency with additional flour if needed.
  3. Add baking soda – Mix in the baking soda, then add diced apples and stir gently.
  4. Fry the pancakes – Melt 2 tbsp oil in a non-stick skillet over medium heat. Drop batter by heaping tablespoons, cook until golden, then flip and cook the other side. Repeat for remaining batter.
  5. Serve – Enjoy Oladi warm with jam, honey, or sour cream.
