French Toast
- 6 slices brioche or white sandwich bread, slightly stale
- 30 – 40g (2 – 3 tbsp) butter
- 2 large eggs (~60g / 2 oz each)
- ½ cup (125 ml) milk
- ½ tsp cinnamon powder
- 1 tsp vanilla extract
Macerated Strawberries (Optional)
- 250g (8 oz) strawberries, halved
- 1 tbsp white sugar
To Serve
- Prepare the egg mixture: In a bowl, whisk together the eggs, milk, cinnamon powder, and vanilla extract vigorously to ensure the cinnamon is fully incorporated and does not float on top.
- Heat the pan: Melt 15g (1 tbsp) butter in a non-stick skillet over medium heat to create a buttery cooking surface for the bread.
- Dip the bread: Quickly dunk each slice of bread into the egg mixture, coating both sides evenly but avoiding soaking too long to prevent sogginess.
- Cook the bread slices: Place the coated bread into the skillet without overcrowding, cooking 2 to 3 slices at a time. Cook each side for 2½ to 3 minutes until golden brown and slightly crisp on the outside.
- Finish cooking remaining slices: Add more butter to the pan if needed and continue cooking the remaining slices in batches following the same process.
- Prepare macerated strawberries (optional): Toss the halved strawberries with the white sugar and set aside for at least 20 minutes. The strawberries will soften and release their juices, creating a natural syrup.
- Serve: Plate the French toast slices, add a pat of butter on top, drizzle generously with maple syrup, and serve with macerated strawberries if desired.
Notes
- Using slightly stale bread helps it soak up the egg mixture without falling apart.
- Be careful not to overcrowd the pan to allow even cooking and browning.
- Macerating strawberries enhances their sweetness and flavor but is optional.
- Adjust cinnamon amount based on personal taste.
- For a richer flavor, brioche bread is preferred over standard white bread.
