Chocolate Base

  • 3/4 cup (1 1/2 sticks) butter
  • 1 can (5 oz) evaporated milk
  • 1 jar (7 oz) marshmallow fluff
  • 3 cups sugar

Mix-ins

  • 1 1/2 cups mix-ins (such as nuts, Oreo pieces or toffee bits), divided

Instructions

  1. Prepare the pan: Lightly coat a 9×13-inch baking dish with cooking spray and line it with parchment paper, leaving a 2-inch overhang on the long sides to make it easier to lift the fudge out later.
  2. Melt the chocolate: Place the chocolate chips in a heatproof bowl and microwave on high, stirring every 30 seconds until completely melted and smooth. Set aside.
  3. Cook the butter and fluff mixture: In a medium saucepan over medium-high heat, combine the butter, evaporated milk, and marshmallow fluff. Attach a candy thermometer to the pan and cook, stirring occasionally, until the mixture is fully melted and smooth.
  4. Add sugar and boil: Stir in the sugar, then bring the mixture to a gentle boil, stirring constantly to prevent scorching. Continue cooking until the candy thermometer reaches 234ºF (the soft-ball stage), about 4 to 5 minutes. If you don’t have a thermometer, look for a slight golden color and a caramel aroma.
  5. Combine chocolate and mix-ins: Remove the pan from heat immediately. Fold in the melted chocolate until fully incorporated, then fold in 1 cup of your chosen mix-ins evenly throughout the fudge mixture.
  6. Set the fudge: Pour the fudge into the prepared baking dish. Sprinkle the remaining 1/2 cup of mix-ins on top for added texture and visual appeal. Let the fudge cool completely at room temperature until firm.
  7. Serve and store: Once set, use the parchment overhang to lift the fudge from the pan and cut into squares. Store tightly wrapped at room temperature for up to 14 days.
