  • 2 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 pound uncooked fettuccine or linguine
  • 4 cups chicken broth
  • 2 cups whole or reduced-fat milk
  • Kosher salt and freshly ground black pepper, to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley leaves*
  • Juice of one lemon (optional)

Instructions

  1. Step 1: Place an extra-large skillet or cast iron casserole dish on the stovetop over medium-high heat. Add the butter and let it melt, then add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes.
  2. Step 2: Spread the pasta in an even layer across the bottom of the pan. Pour in chicken broth and milk; season with salt and pepper, to taste.
  3. Step 3: Bring to a boil; reduce heat and simmer. Stir the pasta frequently to ensure even cooking and to prevent the noodles from sticking together. Continue cooking at a simmer until pasta is cooked through, about 18-20 minutes. Stir in Parmesan. If the mixture is too thick, add more milk as needed until the desired consistency is reached.
  4. Step 4: Serve immediately, garnished with parsley and lemon juice, if desired.
