Instructions

  1. Prepare the eggnog base: In a medium heatproof bowl, combine the egg yolk, heavy cream, orange zest, cinnamon extract (or ground cinnamon), vanilla extract, and half (1/2 teaspoon) of the grated fresh nutmeg. Place the bowl over a pot of barely simmering water, ensuring the bottom of the bowl does not touch the water. Whisk continuously over medium-high heat for 2 to 3 minutes until the mixture slightly thickens.
  2. Melt the white chocolate: Remove the bowl from heat, add the white chocolate chips, and stir gently until fully melted and smooth. Pour the mixture into a large shallow container and refrigerate for 1 to 2 hours until chilled and firm.
  3. Prepare the coating: In a shallow bowl, whisk together the powdered sugar, ground cinnamon, and the remaining 1/2 teaspoon grated fresh nutmeg until evenly combined.
  4. Form and coat truffles: Using about 2 tablespoons of the chilled cream and chocolate mixture, scoop and roll into balls with your hands. Roll each ball thoroughly in the powdered sugar and spice mixture to coat. Place the truffles on a parchment-lined sheet tray.
