  • 3 cups powdered sugar (sifted)
  • 34 Tablespoons milk (whole milk recommended)
  • 2 Tablespoons light corn syrup
  • ½ teaspoon vanilla extract
  • Gel food coloring (optional)

Instructions

  1. Make the Cookie Dough: In a stand mixer or a large bowl with a hand mixer, beat together the softened butter and granulated sugar until creamy and well combined.
  2. Add Eggs and Vanilla: Beat in the egg and 1½ teaspoons vanilla extract until completely combined.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, stirring until a smooth dough forms.
  5. Chill the Dough: Divide the dough in half, place each half on a sheet of plastic wrap, shape into flat disks, wrap tightly, and refrigerate for 2-3 hours or up to 5 days to chill.
  6. Prepare for Baking: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper, or use an ungreased baking sheet.
  7. Roll Out Dough: On a floured surface, roll out one dough disk to 1/8″ thickness for crispier cookies or 1/4″ for softer cookies. Use cookie cutters to cut shapes, dusting with flour as needed to prevent sticking. If dough cracks, let it rest at room temperature briefly.
