For the Creamy Sauce:
- 2 cups heavy cream
- 1 cup whole milk
- 1/4 cup apple cider (not vinegar)
- 2 cloves garlic, chopped
- 2 tablespoons chopped fresh thyme
- 2 teaspoons onion powder
- 1/2 teaspoon cayenne pepper, or to taste
- 1 cup shredded Gruyere cheese
For the Sweet Potatoes:
- 1/2 cup grated parmesan cheese
- 6 medium sweet potatoes, cut into 1/8-inch-thick slices
