These Easy Creamy Scalloped Sweet Potatoes are a decadent and flavorful side dish perfect for any occasion. Layers of thinly sliced sweet potatoes are baked in a rich and creamy sauce with a hint of garlic, herbs, and two types of cheese.

For the Creamy Sauce:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/4 cup apple cider (not vinegar)
  • 2 cloves garlic, chopped
  • 2 tablespoons chopped fresh thyme
  • 2 teaspoons onion powder
  • 1/2 teaspoon cayenne pepper, or to taste
  • 1 cup shredded Gruyere cheese

For the Sweet Potatoes:

  • 1/2 cup grated parmesan cheese
  • 6 medium sweet potatoes, cut into 1/8-inch-thick slices
  • 1 tablespoon chopped fresh rosemary

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F and butter a 9×13 inch casserole dish.
  2. Mix Creamy Sauce: In a large glass measuring cup, combine the cream, milk, apple cider, garlic, thyme, onion powder, cayenne, salt, pepper, and Gruyere cheese.
  3. Layer and Bake: Pour 1/3 of the creamy sauce into the dish, layer with sweet potatoes, repeat layers, and finish with the remaining sauce. Bake covered for 1 hour 45 minutes to 2 hours.
  4. Top and Bake Again: Uncover, sprinkle with parmesan and rosemary, bake for another 20 minutes until golden and bubbly.
  5. Serve: Serve warm, garnished with fresh thyme.
