  • 12 large Eggs
  • 1/2 cup Half and half (or any milk of your choice)
  • 2 cups Cheddar cheese (shredded and divided; or any cheese of your choice)

  • 1/4 tsp Black pepper

  • 3 tbsp Olive oil (divided into 1 tbsp and 2 tbsp)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375 degrees F (191 degrees C). Grease the bottom of a large baking dish to prevent sticking and ensure easy serving.
  2. Cook Ham: In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the diced ham and cook for 5-6 minutes until browned. Remove the ham from the skillet and set aside.
  3. Sauté Onions: Add the remaining 2 tablespoons of olive oil to the skillet and heat until shimmering. Add diced onions and sauté for 3-5 minutes until they become translucent and fragrant.
  4. Cook Vegetables: Add the minced garlic, diced bell peppers, and sliced mushrooms to the skillet. Continue cooking for 6-8 minutes until the vegetables soften and release their aromas.
  5. Combine Ham and Veggies: Remove the skillet from heat. Stir the browned ham back into the vegetable mixture. If using green onions, stir them in now. Transfer this mixture evenly into the prepared baking dish.
  6. Prepare Egg Mixture: In a large bowl, whisk together 12 eggs, half and half (or milk), 1 cup of shredded cheese, sea salt, and black pepper until fully combined and smooth.
  7. Assemble Casserole: Pour the egg mixture over the ham and vegetable layer in the baking dish. Stir gently to combine the layers slightly. Then, sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top.
