  • 8 ounces freshly grated white cheddar, divided
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 2 tablespoons grated Parmesan cheese

  • 1 teaspoon chopped fresh oregano, plus extra for garnish
  • 2 teaspoons Dijon mustard

Instructions

  1. Preheat and cook lobster: Preheat your oven to 375℉ (190℃). Bring a pot of water to a rolling boil. Once boiling, add the lobster tails and boil for 5 minutes until cooked through. Drain and let cool enough to handle.
  2. Prepare lobster meat: Once cool, remove the lobster meat from the shells. Using kitchen scissors, cut down the back of the tail shells to extract the meat easily. Chop the lobster meat into small bite-sized pieces.
  3. Sauté aromatics: Heat a medium skillet over medium-high heat and add olive oil. Add the minced garlic and chopped shallots and sauté for 1-2 minutes until fragrant and softened. Pour in the dry sherry and cook for another 1-2 minutes, allowing the liquid to evaporate. Season with salt and pepper to taste.
  4. Combine dip ingredients: In a medium bowl, combine the chopped lobster meat, sautéed shallot and garlic mixture, half of the grated white cheddar, softened cream cheese, sour cream, grated Parmesan, chopped fresh oregano, and Dijon mustard. Mix thoroughly until all ingredients are evenly incorporated.
  5. Prepare for baking: Transfer the mixture to a 10–12 inch oven-safe skillet or baking dish. Use the back of a spatula to smooth the mixture evenly. Sprinkle the remaining grated white cheddar evenly over the top.
  6. Bake and garnish: Place the dish in the preheated oven and bake for 20 to 25 minutes, or until the cheese on top is golden brown and bubbly. Remove from oven and garnish with extra chopped fresh oregano if desired.
  7. Serve: Serve the hot lobster dip with sliced baguette, crackers, or fresh vegetables for dipping and enjoy this rich, creamy appetizer.
