  • 45 Oreo cookies

Pudding Filling

  • 3.4 oz box instant cheesecake or white chocolate pudding mix

  • 3 cups shredded coconut
  • Green gel food coloring
  • 10 Peeps chick or bunny marshmallows
  • 30 mini Cadbury eggs

Instructions

  1. Crush the Oreos: Add the Oreo cookies to a food processor and pulse until the cookies become fine crumbs. Set the Oreo crumbs aside for later use.
  2. Prepare the pudding: In a large bowl, whisk together the cold milk and instant cheesecake or white chocolate pudding mix. Place the mixture in the refrigerator for about five minutes to allow it to set and thicken, then stir again to ensure smoothness.
  3. Fold in the whipped topping: Gently fold the thawed Cool Whip into the thickened pudding mixture until fully combined and smooth.
  4. Divide and color the pudding: Split the pudding mixture evenly into two bowls. Add two to three drops of gel food coloring of your choice to each bowl, using different colors. Gently fold in the coloring until the pudding reaches your desired hue.
  5. Color the shredded coconut: Place shredded coconut into a zipper-top bag and add two to three drops of green gel food coloring. Seal the bag and shake vigorously until the coconut is evenly coated with green color, resembling grass.
  6. Assemble the dirt cups: Into each of the 10 cups, add two tablespoons of Oreo crumbs as the bottom layer. Next, add two tablespoons of one colored pudding on top. Then add another two tablespoons of Oreo crumbs, followed by two tablespoons of the other colored pudding. Finish with a final layer of Oreo crumbs.
  7. Add the finishing touches: Top each cup with about one tablespoon of the green-colored shredded coconut to mimic grass. Garnish with one bunny or chick Peep marshmallow and three mini Cadbury eggs on top of the coconut layer.
  8. Serve or store: Serve the Easter Dirt Cups immediately, or refrigerate until ready to serve to keep them fresh and cool.
