  • 100g Unsalted butter, melted
  • 1 Egg yolk
  • 2 Large eggs
  • 40g All-purpose flour

For Serving

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (175ºC) to get it ready for baking the lava cakes.
  2. Prepare Ramekins: Take 4 ramekins and coat the sides with melted butter, optionally sprinkle lightly with flour to ensure the cakes don’t stick after baking.
  3. Mix Eggs and Flour: In a small bowl, combine the 2 large eggs, 1 egg yolk, and 40g of all-purpose flour. Whisk them together until the mixture is smooth and creamy.
  4. Combine Dulce de Leche and Butter: In a larger bowl, stir together the 400g dulce de leche and 100g melted unsalted butter until fully incorporated and smooth.
  5. Combine Mixtures: Add the egg and flour mixture into the dulce de leche and butter bowl. Mix thoroughly until the batter is well combined and uniform.
  6. Fill Ramekins and Bake: Pour the batter evenly into the prepared ramekins. Bake in the preheated oven for about 12 minutes, or until the edges are set but the center is still slightly wobbly to maintain the lava effect.
  7. Cool and Serve: Let the cakes cool in the ramekins for 10 minutes. Then carefully invert each cake onto a plate using a kitchen towel to gently loosen and flip. Dust with powdered sugar or serve with your favorite toppings.
