A refreshing and simple cucumber salad with feta cheese, dressed in a tangy balsamic vinaigrette. This light and flavorful salad is perfect for a quick and healthy side dish.

Salad Ingredients:

  • 2 English cucumbers, sliced into rings
  • 1 small/medium red onion, thinly sliced
  • 1 bell pepper (any color), sliced into strips
  • 1/2 cup Feta cheese (or to taste)

Balsamic Dressing:

  • 2 Tbsp Extra Virgin Olive Oil
  • 1 Tbsp Balsamic Vinegar
  • 2 Tbsp Lemon juice
  • 1/21 tsp Salt (or to taste)
  • 1/8 tsp Black pepper (or to taste)

Instructions

  1. In a small bowl or measuring cup, whisk together the balsamic dressing ingredients until the salt dissolves completely. Combine Extra Virgin Olive Oil, Balsamic Vinegar, Lemon juice, Salt, and Black pepper.
  2. Slice the cucumbers, bell pepper, and red onion, and place them in a mixing bowl.
  3. Just before serving, drizzle the balsamic dressing over the vegetables and sprinkle with a generous amount of feta cheese.
  4. Toss the salad gently to combine. Taste and adjust seasoning with additional salt, if desired. Serve immediately.
