Instructions

  1. Brown the steak: Heat olive oil in a skillet over medium heat. Add sliced sirloin steak seasoned with salt and pepper. Cook until the steak is browned on all sides but not fully cooked through, then remove from heat.
  2. Prepare the sauce in Crockpot: In the Crockpot, add minced garlic, ginger, sesame oil, brown sugar, soy sauce, and beef broth. Whisk together until smooth and well combined.
  3. Add steak and onions to Crockpot: Place the browned steak strips and sliced onions into the Crockpot with the sauce. Stir to coat evenly.
  4. Slow cook: Cover the Crockpot with the lid and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, allowing the flavors to meld and the steak to become tender.
  5. Add peppers and thicken sauce: About 30 minutes before the end of the cooking time, stir in the sliced bell peppers along with a slurry made by mixing cornstarch and water. Cover again and cook on high for 30 more minutes until the peppers are tender and the sauce thickens.
