  • 1/4 cup sweet chili sauce (store-bought)
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp Sriracha sauce
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp water

Instructions

  1. Preheat and Prepare Feta Mixture: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. In a bowl, combine the crumbled feta, fresh dill, thyme, lemon juice, minced garlic, and honey. Mix well until all ingredients are evenly incorporated.
  2. Prepare Phyllo Dough Sheets: Place one sheet of thawed phyllo dough on a clean work surface, keeping the rest covered with a damp towel to prevent drying out. Fold the sheet in half to create a double layer.
  3. Fill and Roll: Brush the top of the folded phyllo with extra virgin olive oil. Spoon about 2 tablespoons of the feta mixture onto the bottom center edge of the dough. Fold the side edges inward to cover the filling, smoothing out any creases.
  4. Roll into Logs: Carefully roll the dough into a tight log, stopping about one inch from the end. Brush a little more olive oil along the bottom edge, then finish rolling tightly. Place the roll seam-side down on the prepared baking sheet.
  5. Brush and Bake: Brush the tops of each feta roll with additional olive oil. Arrange them evenly on the baking sheet and bake in the preheated oven on the center rack for 20 minutes, or until golden and crispy.
  6. Make the Sweet Chili Sauce: While the rolls bake, combine sweet chili sauce, soy sauce, honey, Sriracha, lemon juice, and water in a medium saucepan over low heat. Bring to a gentle simmer, then immediately remove from heat and pour into a serving dish.
  7. Finish and Serve: Remove the baked feta rolls from the oven and brush each generously with the sweet chili sauce. Garnish with fresh thyme leaves and serve warm with the remaining sauce for dipping.
