  • 3 ribs celery, finely diced (about 1 cup)
  • 2 Tablespoons tomato paste
  • 4 cups low-sodium chicken broth
  • 1 teaspoon Dried oregano
  • 1 1/2 teaspoons dried basil leaves

Roux:

  • ½ cup butter
  • ½ cup all-purpose flour

Finishing Touches:

  • 1 cup freshly grated parmesan cheese
  • 1½ cups half and half (or whole milk)
  • 1 teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh basil

Instructions

  1. Sauté Vegetables: Heat oil in a large soup pot over medium-high heat. Sauté carrots, onions, and celery until softened.
  2. Add Ingredients: Stir in diced tomatoes, tomato paste, chicken broth, oregano, and basil. Simmer until vegetables are tender.
  3. Puree Soup: Blend the soup until smooth using an immersion blender. Return to pot.
  4. Prepare Roux: In a separate pot, melt butter, add flour, and cook until golden. Slowly whisk in soup.
  5. Incorporate Cheese and Cream: Stir in parmesan, half and half, salt, pepper, and basil. Adjust seasoning to taste.
