  • 1 yellow onion, diced
  • 1 pound ground Italian sausage
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 5 cups chicken broth
  • 1 (14.5 ounce can) can of fire-roasted diced tomatoes, undrained
  • 2 cups uncooked ditalini pasta

For the Creamy Base:

  • 1/2 cup Parmesan, freshly grated
  • 2 ounces cream cheese, room temperature
  • 1/2 cup milk
  • 1 tablespoon parsley, chopped (optional)

Instructions

  1. In a large Dutch oven over medium heat, sauté the onion in olive oil until softened. Add the Italian sausage and brown, draining excess grease. This will take about 5-7 minutes.
  2. Add the garlic, red pepper flakes, Italian seasoning, salt, and pepper, and cook for 1 minute. Stir well to incorporate the flavors.
  3. Pour in the chicken broth and diced tomatoes. Bring to a boil, then add the pasta. Lower the heat and simmer for 10 minutes until the pasta is tender.
  4. Reduce heat and stir in Parmesan, cream cheese, and milk. Let it simmer for an additional 2 minutes to melt the cheeses.
  5. Season with salt and pepper to taste, then mix in the parsley. Adjust seasoning as needed.
  6. Serve hot, garnished with extra Parmesan cheese if desired.
