For the Soup:
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 1 pound ground Italian sausage
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 5 cups chicken broth
- 1 (14.5 ounce can) can of fire-roasted diced tomatoes, undrained
- 2 cups uncooked ditalini pasta
For the Creamy Base:
- 1/2 cup Parmesan, freshly grated
- 2 ounces cream cheese, room temperature
- 1/2 cup milk
- 1 tablespoon parsley, chopped (optional)
- In a large Dutch oven over medium heat, sauté the onion in olive oil until softened. Add the Italian sausage and brown, draining excess grease. This will take about 5-7 minutes.
- Add the garlic, red pepper flakes, Italian seasoning, salt, and pepper, and cook for 1 minute. Stir well to incorporate the flavors.
- Pour in the chicken broth and diced tomatoes. Bring to a boil, then add the pasta. Lower the heat and simmer for 10 minutes until the pasta is tender.
- Reduce heat and stir in Parmesan, cream cheese, and milk. Let it simmer for an additional 2 minutes to melt the cheeses.
- Season with salt and pepper to taste, then mix in the parsley. Adjust seasoning as needed.
- Serve hot, garnished with extra Parmesan cheese if desired.
