Ingredients

Scale

Spinach Mixture

  • 1 tablespoon olive oil, divided
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 (10 ounce) packages frozen spinach, thawed, drained, and chopped

Dairy and Seasoning

  • ½ cup milk
  • 6 ounces cream cheese
  • 1 cup shredded mozzarella cheese, divided
  • ¼ cup shredded cheddar cheese
  • 2 dashes Worcestershire sauce
  • Salt and ground black pepper to taste

Instructions

  1. Preheat and prepare the baking dish: Preheat your oven to 425°F (220°C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon of olive oil to prevent sticking and ensure even cooking.
  2. Sauté onion and garlic: Heat 2 teaspoons of olive oil in a large pot over medium heat. Add the finely chopped onion and minced garlic, cooking and stirring until they are lightly browned and fragrant. This should take about 4 to 7 minutes, which develops the base flavor for the dip.
  3. Cook the spinach: Add the thawed, drained, and chopped spinach to the pot. Simmer the mixture over medium heat for about 5 minutes until the spinach is heated through. Drain any excess liquid from the spinach mixture, then transfer it to a bowl to set aside.
  4. Melt cream cheese and combine: Pour the milk into the same pot and return it to medium heat. Add the cream cheese and stir continuously until it melts and combines smoothly with the milk, which will take about 3 minutes.
  5. Mix cheeses and seasonings: Return the cooked spinach mixture back to the pot. Add ½ cup of mozzarella cheese and the shredded cheddar cheese. Stir the mixture thoroughly to combine all ingredients evenly. Season with Worcestershire sauce, salt, and ground black pepper according to your taste preferences.
  6. Assemble in baking dish: Pour the combined mixture into the prepared baking dish. Sprinkle the remaining ½ cup mozzarella cheese evenly over the top, which will create a golden, bubbly crust when baked.
  7. Bake the dip: Place the baking dish in the preheated oven and bake for 20 to 25 minutes until the dip is bubbly and the cheese on top turns golden brown. Carefully remove from the oven and let it cool slightly before serving.

Notes

  • Make sure to thoroughly drain the spinach to avoid a watery dip.
  • For extra flavor, you can add a pinch of nutmeg or cayenne pepper to the cheese mixture.
  • This dip pairs wonderfully with toasted baguette slices, crackers, or fresh vegetables.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently in the oven or microwave.
