Cream Cheese Mixture:

  • 8 oz cream cheese, softened
  • 3½ cups frozen corn, thawed
  • 12 Tbsp mayonnaise
  • 1 10 oz can petite diced tomatoes with chilies
  • ½ tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp cumin powder
  • ½ tsp chipotle powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ⅓ cup pickled peppers, plus more for garnish
  • 2 Tbsp fresh cilantro, chopped, plus more for garnish

Garnish:

  • 3 green onions, chopped
  • ⅓ cup cheddar cheese, shredded

Instructions

  1. Preheat Oven: Preheat oven to 350 degrees F.
  2. Mix Ingredients: In a large bowl, beat cream cheese until smooth. Add in corn, tomatoes, mayo, seasoning, pickled peppers, canned chicken (optional), and cilantro. Mix well.
  3. Bake: Transfer the mixture to a skillet or baking dish. Bake in the preheated oven for 30 minutes.
  4. Add Cheese: Sprinkle grated cheese on top and bake for an additional 5 minutes until cheese is melted.
  5. Garnish and Serve: Let the dip cool slightly, then garnish with green onions, cilantro, and pickled peppers. Serve with pretzels, tortilla chips, or crackers.
