Ideal for parties or a tasty snack, they bring a gourmet twist to traditional egg rolls.

Ingredients

Scale

Crab Cake Mixture

  • 1/4 cup mayonnaise
  • 1 large egg (beaten)
  • 1 teaspoon Old Bay seasoning
  • 1/2 tablespoon lemon juice
  • 1 tablespoon fresh parsley (chopped)
  • 1/2 teaspoon Worcestershire sauce
  • 1 pound crab meat (picked over for shells)

Egg Rolls

  • 12 egg roll wrappers
  • Vegetable oil (for frying)

Instructions

  1. Prepare the Crab Mixture: In a mixing bowl, combine mayonnaise, beaten egg, Old Bay seasoning, lemon juice, chopped parsley, and Worcestershire sauce. Stir until well blended to create a flavorful sauce base.
  2. Fold in the Crab Meat: Gently incorporate the crab meat into the mayo mixture, careful not to break up the crab chunks. Mix until the filling is evenly combined.
  3. Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface in a diamond shape. Spoon approximately 2 tablespoons of the crab mixture onto the lower half of the wrapper. Fold the bottom corner over the filling, then fold in the two side corners. Roll tightly towards the top corner and seal it with a dab of water to secure the egg roll.
  4. Heat the Oil: In a deep fryer or a large pot, heat vegetable oil to 350°F (175°C), making sure there is enough oil to submerge the egg rolls comfortably.
  5. Fry the Egg Rolls: Fry the egg rolls in batches to avoid overcrowding, cooking each side for about 2-3 minutes until they turn golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels to remove excess oil.

Notes

  • Pick over the crab meat carefully to remove any shells for a smooth texture.
  • Do not overfill the egg rolls to prevent them from bursting during frying.
  • Maintain oil temperature to ensure even frying and prevent greasiness.
  • Serve with your favorite dipping sauce such as cocktail sauce or spicy aioli for extra flavor.
  • Leftover egg rolls can be reheated in an oven to maintain crispiness.
