Corn and Avocado Salsa:
- 500g corn cobs
- 2 avocados (diced)
- 1 red onion (diced)
- 1 punnet cherry tomatoes (diced)
- coriander (finely chopped)
- juice of 1 lime
- 1 1/2 tbsp olive oil
- pinch of flaky sea salt
- Cook Corn: Add a good drizzle of olive oil to a pan and heat to medium-high. Add the corn cobs and cook until golden on each side.
- Prepare Salsa: Cut the corn off the cob and add to a large salad bowl along with diced avocados, red onion, cherry tomatoes, and finely chopped coriander.
- Finish and Serve: Squeeze lime juice over the mixture, drizzle with olive oil, add a pinch of flaky sea salt, mix well, and serve to enjoy!
