For Chicken Tenders:

  • 1 large egg
  • 1 1/2 c. buttermilk
  • 5 tsp. kosher salt, divided
  • Freshly ground black pepper
  • 2 lb. chicken tenders
  • 2 1/2 c. (300 g.) all-purpose flour
  • 1/2 c. cornstarch
  • 1 1/2 tsp. paprika
  • 1 tsp. garlic powder
  • 1/2 tsp. onion powder
  • Vegetable oil, for frying (4 to 6 cups)

For Cane’s Sauce:

  • 3/4 c. mayonnaise
  • 3 tbsp. ketchup
  • 1 tbsp. Worcestershire sauce
  • 3/4 tsp. freshly ground black pepper
  • 1/2 tsp. kosher salt

For Serving:

  • Crinkle fries

Instructions

  1. Chicken Tenders – In a large bowl, whisk together egg, buttermilk, 2 tsp. salt, and pepper. Marinate chicken in the mixture. In a separate bowl, combine flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper. Coat marinated chicken in flour mixture. Deep fry until golden and cooked through.
  2. Cane’s Sauce – Mix mayonnaise, ketchup, Worcestershire sauce, garlic powder, pepper, salt, and onion powder in a bowl. Serve with chicken and fries.
