Ingredients

Scale

Bread:

  • 6 cups day-old bread, cubed (white or brioche)

Wet Ingredients:

  • 4 large eggs
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Topping:

  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1 tablespoon cinnamon
  • 1/4 cup granulated sugar

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.
  2. Prepare the Bread: Place the cubed bread in a large mixing bowl. Optionally, lightly toast the bread cubes in the oven for 5-10 minutes for added texture.
  3. Mix the Wet Ingredients: Whisk together eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and salt until combined.
  4. Combine: Pour the egg mixture over the bread cubes and toss gently to coat. Let it sit for 10 minutes to absorb the liquid.
  5. Fill the Muffin Tin: Distribute the soaked bread mixture into the muffin tin, filling each cup 3/4 full.
  6. Prepare the Topping: Mix melted butter, brown sugar, cinnamon, and granulated sugar. Drizzle over the muffins.
  7. Bake: Bake for 18-20 minutes until golden and a toothpick comes out clean.
  8. Cool & Serve: Cool in the tin for 5 minutes before serving warm, with optional maple syrup drizzle.

Notes

  • You can customize these muffins by adding nuts or raisins to the bread mixture before baking.
  • For a richer flavor, you can use a combination of milk and cream or half-and-half.
