This quick and delicious sausage pasta skillet recipe is a flavorful one-pan meal that is perfect for busy weeknights. The combination of Italian sausage, bell peppers, onions, and tomatoes creates a savory sauce that coats the penne pasta beautifully.

Ingredients

Italian Sausage:

1 package Italian sausage, 5 or 6 sausages

Penne Pasta:

1-pound bag of penne pasta

Vegetables:

1 red bell pepper, sliced; 1 small red onion, sliced; 4 cloves garlic, minced

Seasonings:

Salt and fresh cracked pepper to taste; 2 tablespoons crushed tomato; ½ cup vegetable or chicken broth; ½ teaspoon crushed chili pepper; 1 teaspoon Italian seasoning; 2 teaspoons fennel seeds, crushed in a mortar

Garnish:

1 scallion, sliced, for garnish; Fresh chopped basil, for garnish

Instructions

  1. Cook the Pasta: Cook pasta according to package directions until al dente. Drain and set aside.
  2. Sear the Sausages: Heat oil in a skillet. Add sausages and cook until browned on all sides. Add water to prevent sticking. When almost cooked, transfer sausages to a cutting board.
  3. Sauté Vegetables: In the same skillet, sauté onions with fennel seeds, chili pepper, and Italian seasoning. Add garlic and crushed tomato. Cook for a few minutes.
  4. Add Bell Pepper and Tomatoes: Stir in bell pepper and diced tomatoes. Cook until vegetables are crisp-tender. Add broth and season with salt and pepper.
  5. Combine Ingredients: Slice sausages and add back to the skillet. Cook until sausage is done and sauce thickens. Add pasta and heat through.
  6. Garnish and Serve: Garnish with basil, scallions, and parmesan cheese before serving.
