Ingredients

Scale

Greek Yogurt Base

  • 1 1/2 cups plain Greek yogurt, 2% or higher
  • 2 tbsp pure maple syrup
  • 1/2 tsp vanilla extract

Fruit

  • 1 cup strawberries, diced, divided

Chocolate Topping

  • 1 cup semi-sweet chocolate chips
  • 1/2 tbsp coconut oil

Optional

  • Flaky sea salt, a couple pinches

Instructions

  1. Prepare the Yogurt Mixture: In a mixing bowl, combine the plain Greek yogurt, pure maple syrup, and vanilla extract. Mix well until fully blended.
  2. Spread Yogurt on Baking Sheet: Line a baking sheet with parchment paper. Spread the yogurt mixture evenly in a single layer using a spatula. Set the baking sheet aside.
  3. Melt Chocolate: Place the semi-sweet chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each, until the chocolate is fully melted and smooth.
  4. Mix Strawberries with Chocolate: Quickly fold 3/4 of the diced strawberries into the melted chocolate, distributing them evenly but acting fast so the chocolate doesn’t harden.
  5. Assemble the Bark: Spread the chocolate-strawberry mixture evenly over the layer of Greek yogurt on the baking sheet. Sprinkle the remaining 1/4 cup of diced strawberries on top. Optionally, add a few pinches of flaky sea salt for a subtle contrast in flavor.
  6. Freeze: Place the baking sheet in the freezer and freeze for at least 4 hours, or until the yogurt bark is fully hardened.
  7. Serve and Store: Once frozen, cut the bark into pieces using a knife or break it by hand. Store the pieces in a freezer-safe bag or container to keep them fresh and ready to enjoy.

Notes

  • Use Greek yogurt with at least 2% fat for best creamy texture.
  • Maple syrup can be substituted with honey or agave nectar for different sweeteners.
  • Ensure the chocolate mixture is spread quickly before it hardens.
  • Store bark in the freezer as it will soften at room temperature.
  • Try using dark chocolate chips for a less sweet variation.
