Instructions

  1. Melt the chocolate: Add the chopped dark chocolate or chocolate chips to a pot set over low heat. Stir continuously until the chocolate melts completely and is smooth.
  2. Remove from heat: Once melted, immediately remove the pot from the heat to prevent burning.
  3. Add pumpkin seeds: Stir in 3/4 cup of the toasted pumpkin seeds into the melted chocolate, ensuring they are fully coated.
  4. Prepare clusters: Using a heaping teaspoon, scoop out portions of the chocolate-coated pumpkin seeds and place them onto a plate or sheet pan lined with parchment paper or a silicone baking mat.
  5. Add plain pumpkin seeds: Immediately sprinkle a few of the reserved plain pumpkin seeds on top of each cluster to add texture.
  6. Sprinkle sea salt: If desired, lightly sprinkle sea salt over the clusters to enhance flavor.
  7. Repeat scooping: Continue the scooping, topping, and sprinkling process until all the chocolate pumpkin seed mixture is used, making approximately 20 clusters.
  8. Chill to set: Place the clusters in the refrigerator and allow them to harden for at least one hour before serving.
