  • 1 1/2 cups brewed coffee
  • 7 ounces Riesen chewy chocolate caramels

For the Cake Topping:

  • 1 cup sugar
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil (such as sunflower)
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat Oven: Adjust rack to center position of oven and preheat to 350°F.
  2. Prepare Chocolate Base: In a small pot over medium-low heat, combine cocoa, sugar, brown sugar, and coffee. Cook until sugars are dissolved. Keep warm.
  3. Layer Caramels: Unwrap Riesen candies and place them on the bottom of a square baking dish.
  4. Make Cake Batter: Whisk together sugar, flour, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Beat for 2 minutes.
  5. Assemble and Bake: Pour cake batter over candies. Pour warm coffee mixture over batter. Do not stir. Bake for 45 minutes.
  6. Serve: Cool for 15 minutes before serving warm. Top with vanilla ice cream, if desired.
