This decadent Chocolate Chip Cheesecake combines a rich, creamy cheesecake filling loaded with mini chocolate chips on a buttery chocolate chip cookie crumb crust. Baked to perfection and topped with melted chocolate, whipped cream, and extra chips, it makes an irresistible dessert for chocolate lovers.

Ingredients

Scale

Crust

  • 1 1/2 cups chocolate chip cookie crumbs
  • 1/4 cup melted butter

Filling

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup mini chocolate chips

Topping

  • 1/2 cup chocolate chips, melted
  • Whipped cream
  • Extra chocolate chips

Instructions

  1. Preheat and Prepare Crust: Preheat your oven to 325°F (163°C). Mix the chocolate chip cookie crumbs with the melted butter until combined, then press the mixture firmly into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes to set.
  2. Make Filling: In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the vanilla extract. Then, add eggs one at a time, mixing just until blended after each addition to avoid overmixing. Gently fold in the mini chocolate chips.
  3. Assemble Cheesecake: Pour the cream cheese filling evenly over the baked crust in the springform pan, smoothing the top gently.
  4. Bake Cheesecake: Bake the cheesecake for 50 to 55 minutes, or until the center is slightly jiggly but set. Avoid overbaking to keep the texture creamy.
  5. Cool and Chill: Turn off the oven, leave the cheesecake inside with the door slightly open, and let it cool for 1 hour. Then, refrigerate the cheesecake for at least 4 hours or overnight to firm up completely.
  6. Decorate and Serve: Before serving, drizzle the melted chocolate over the top, add whipped cream dollops, and sprinkle extra chocolate chips for garnish.

Notes

  • Ensure the cream cheese is softened to room temperature for a smooth filling.
  • Do not overmix the batter to avoid incorporating too much air, which can cause cracks.
  • Cooling slowly in the oven helps prevent cracking on the cheesecake surface.
  • Use a springform pan for easy removal of the cheesecake.
  • Mini chocolate chips disperse better in the batter without sinking.
