For the Chicken:
1 lb. chicken tenderloins
Salt and pepper
1/2 teaspoon garlic powder
2 tablespoons olive oil
For the Garlic Parmesan Rice:
1 stick butter, divided
2 tablespoons minced garlic
1/4 teaspoon red pepper flakes
1 1/2 teaspoons salt, divided
1/2 cup dry white wine
1 1/2 cups uncooked white rice
3 cups chicken broth
1/2 cup fresh grated parmesan cheese
Instructions
Season and Cook Chicken: Season chicken tenders and sauté until cooked. Set aside.
Prepare Garlic Butter Sauce: Sauté garlic, pepper flakes, and salt in butter. Deglaze with white wine.
Cook Rice: Brown rice in the skillet, add broth, and cook until tender.
Combine: Sprinkle parmesan over rice, place chicken over rice, drizzle pan sauce, cover, and let stand.
Serve: Garnish with more parmesan and parsley.
Notes
Be careful not to overcook the garlic to avoid bitterness.
Adjust salt and pepper to taste.
You can add more red pepper flakes for extra heat.
