This Chicken Caesar Pasta Salad combines the classic flavors of a Caesar salad with tender chicken and pasta for a satisfying and flavorful meal.

For the Garlic Breadcrumbs:

  • 1 tablespoon butter
  • 2 cloves garlic, pressed or minced
  • 1/2 cup Panko breadcrumbs
  • Fine sea salt and freshly-ground black pepper, to taste

For the Pasta Salad:

  • 1 pound boneless skinless chicken breasts
  • Fine sea salt and freshly-ground black pepper, to taste
  • 1 tablespoon olive oil
  • 1 pound uncooked pasta (such as farfalle)
  • 3 Romaine lettuce hearts (12 ounces), roughly chopped
  • 1 1/2 cups Caesar dressing
  • Parmesan cheese, for topping

Instructions

  1. Prep the pasta water: Bring a large pot of generously-salted water to a boil over high heat.
  2. Cook the garlic breadcrumbs: Melt butter in a sauté pan over medium heat. Add garlic and sauté for 1 minute. Add breadcrumbs, salt, and pepper. Sauté for 2-3 minutes until golden. Set aside.
  3. Cook the chicken: Season chicken with salt and pepper. Cook in a sauté pan over medium-high heat until no longer pink inside. Slice into bite-sized pieces.
  4. Cook the pasta: Cook pasta in salted water until al dente. Rinse with cold water.
  5. Toss the pasta salad: Combine pasta, lettuce, chicken, and Caesar dressing in a mixing bowl. Toss gently to combine.
  6. Serve: Garnish with garlic breadcrumbs, Parmesan cheese, and black pepper. Serve immediately or chill before serving.
