  • 34 boneless, skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

For the Asparagus:

  • 1 bunch fresh asparagus
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • Grated Parmesan cheese (optional)

Instructions

  1. Rinse and Prepare Asparagus: Rinse asparagus under cold water and trim tough ends.
  2. Season Chicken: In a bowl, coat chicken breasts with olive oil, salt, pepper, and oregano.
  3. Cook Chicken: Heat a skillet over medium-high heat and cook chicken for 6-7 minutes on each side until golden brown.
  4. Add Asparagus: Add asparagus in the last 5 minutes of cooking; stir gently to combine.
  5. Finish Dish: Stir in minced garlic during the last minute and squeeze lemon juice over the dish before serving.
