  • 1 Large Egg
  • 1/2 teaspoon Vanilla
  • 2 teaspoons Baking Soda

  • 3 teaspoons Cinnamon
  • 1 teaspoon Salt
  • 1 1/2 teaspoons Ginger (ground)
  • 6 Cups Flour

For the Glaze:

  • 6 Cups Powdered Sugar
  • 2/3 Cups Milk
  • 4 teaspoons Vanilla

Instructions

  1. Prepare Your Space. Prepare your work space as you will need to move quickly when baking. Set out multiple cookie sheets with parchment or a silpat. Arrange cooling racks over parchment. Set aside a glass bowl for reheating the dough in the microwave.
  2. Preheat the oven to 375 degrees.
  3. Glaze: Mix all glaze ingredients until smooth in a glass bowl and set aside.
  4. Cookies: Simmer molasses and shortening in a pot. Cream sugar, egg, and vanilla. Dissolve baking soda in hot water and add to creamed mixture. Blend spices into creamed mixture. Add molasses mixture and beat until incorporated. Beat in flour until a sticky dough forms. Roll out dough, cut out gingerbread men, and bake at 375 degrees for 5-10 minutes. Dunk hot cookies in glaze and let dry on a rack.
  5. Store in an airtight container or freeze for up to 2 months.

Notes

  • For best results, roll out and cut the dough while it’s still hot for easier handling.
  • Vary the baking time depending on the size of the cookies.
  • Ensure the cookies are fully coated in glaze for a sweet finish.
